Lemon Roasted Carrots

Ingredients
6 1/2 cups sliced carrots
2 1/2 tbsp vegetable oil
2 1/2 tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
Preparation
1. Toss frozen carrots with oil, lemon juice, salt, and pepper.
2. Place on sheet pan in a single layer and roast at 400°F for 20 minutes, until tender and golden brown.
3. Serve immediately.
